Pumpkin Snickerdoodle Cookies Recipe

Ingredients: 


For the cookies:
  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3/4 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 3/4 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
For the coating:
  • 1/2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Dash of allspice

Tips: Cookies that require decorations, like sugar cookies, or toppings, like thumbprints, can be frozen after baking until ready to finish decorating. Allow to thaw to room temp before icing and decorating.
