Classic Caesar Salad Recipe

Servings 2, Cook+Prep Time: 15 mins

Ingredients: 

  • 1 garlic clove, cut in half
  • 4-5 anchovy fillets
  • Juice of 2 lemons
  • 1 egg yolk
  • 1 1/2 tbs dijon mustard (the spicier the better)
  • 1/2 cup olive oil
  • 1/2 to 1 cup freshly grated parmesan cheese
  • 2-3 heads of romaine lettuce, washed and hand torn into pieces
Croutons:
  • 1 loaf of Italian bread, cut into 1/2 squares
  • 1/2 cup olive oil
  • 1/2 tsp Herbs de Provence (optional)
  • Salt and pepper (to taste)
