Butternut Squash Apple Soup Recipe

Ingredients: 

  • 1 cup diced pancetta
  • 2 celery ribs, chopped
  • 1 medium carrot, chopped
  • 1 medium onion, chopped
  • 1 1/2 teaspoons curry powder
  • 2 medium (about 3/4 pound) Yukon Gold potatoes
  • 2 medium Granny Smith apples
  • 1 1/2 pound butternut squash, peeled, seeded, and cut into 1/2-inch pieces (3 1/2 to 4 cups)
  • 2 cups reduced sodium chicken stock
  • 2 to 2 1/2 cups water
  • Sour cream, for serving
