- 2 cups dried red beans
- 8 cups chicken broth
- ½ medium onion, chopped
- 1 tablespoon salt
- vegetable oil for frying
- ½ cup queso fresco cheese, crumbled ( substitute; feta or Monterey jack.)
Tips: Add a pinch of salt to the soaking water to make the beans softer. Make
sure to rinse the beans well since salt will toughen the beans as they
cook. You could Garnish with some tortilla chips, red pepper and a lemon. To spice it more up you could add in; 1 medium white onion (chopped)
and/or 4 cloves garlic, peeled and finely chopped finely chopped
