Slow Cooker Vegetarian Chili Con Queso Recipe

Servings 10, Cook+Prep Time: 250 mins

Ingredients: 

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (16-ounce) can chili beans in chili sauce, undrained
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 1/4 cup tomato paste
  • 4 teaspoons minced garlic
  • 3 teaspoons chili powder
  • 3 1/2 cups shredded cheddar cheese  
Tip : Great toppings for this recipe are avocado slices, 1/4 can of corn and/or sour cream.
This recipe goes great with some cornbread a side.
