Mexican Chicken Casserole Recipe

Ingredients: 

  • ½ onion sliced
  • 1 can diced green chilis
  • 1½ lb frozen, sliced, seasoned chicken breast
  • 1/4 cup cream cheese
  • 1 cup milk
  • 1 cup chicken broth
  • ¼ cup green salsa
  • 1 cup shredded Monterey jack cheese
  • 8 flour tortillas
  • 1 cup shredded cheddar or Monterey jack

Tips: Many people use Monteray Jack cheese or Cheddar cheese, but you could also use traditional Mexican white goat cheese with jalapeno peppers for even better results. Canned soups are a great way to add liquid and flavor to your casserole.  For a Mexican casserole, a spicy soup is best if you want to make it hotter.
