- 2 red bell peppers, cut in half, white ribs and seeds removed
- 1/2 lb. bulk spicy sausage
- 3/4 cup zucchini, coarsely grated
- 1/4 cup fresh mushrooms, chopped
- 1/4 cup onion, finely chopped
- 2 tablespoons dry breadcrumbs
- 2 tablespoons fresh parsley, minced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon fresh rosemary, chopped
- 1 egg, beaten
- Parmesan cheese
