- 2 tablespoons olive oil
- 3 packs Japanese mushrooms (such as shimeji, enoki, maitake, shiitake, or nameko)
- 2 tablespoons rice vinegar
- 1 tablespoon dashi soy sauce (regular soy sauce will work)
- 1 red chili pepper
- 2 tablespoons chopped mitsuba
- 1 tablespoon chopped green shiso
Tips : Most packaged mushrooms do not require cleaning but it is advisable to check for any signs of dirt or grit. Use a damp cloth to clean mushrooms. Mushrooms should never be washed, as they absorb liquid and become saturated.
