- 1¼ cups cake flour
- 3¾ cups bread flour
- 1½ teaspoons salt
- ¼ cup white sugar
- 1¼ cups cold butter, cut into tablespoon-sized pieces
- 1¼ cups cold water
- 1½ teaspoons lemon juice
Tips: Use icecold butter and no margarine, for good results!. Don't over work the dough! That's what makes it tough. Don't unfold the dough! You want to roll it out. To avoid frustration when rolling out, roll the dough, and give it a quarter turn. This
prevents the dough from sticking to the rolling surface, resulting in
torn dough.
