Vegetarian Bean Chimichangas Recipe

Servings 4, Cook+Prep Time: 25 mins

Ingredients: 

  • 4 Tortillas
  • 1 16 oz. can Red Kidney beans
  • 1 small Onion, finely chopped
  • 1 small Jalapeno, finely chopped (remove the ribs and seeds if you cannot handle spicy food)
  • 1 Garlic clove, finely minced
  • 1 tsp Cumin Ground
  • 1 tsp Chili powder (reduce or omit completely if you don't like spicy food)
  • 1 cup Cheese, grated (I used grated cheddar, but monterey jack or pepper jack will work great too)
  • Salt - to taste
