Marinated Japanese Mushrooms Recipe

Ingredients: 

  • 2 tablespoons olive oil
  • 3 packs Japanese mushrooms (such as shimeji, enoki, maitake, shiitake, or nameko)
  • 2 tablespoons rice vinegar
  • 1 tablespoon dashi soy sauce (regular soy sauce will work)
  • 1 red chili pepper
  • 2 tablespoons chopped mitsuba
  • 1 tablespoon chopped green shiso

Tips : Most packaged mushrooms do not require cleaning but it is advisable to check for any signs of dirt or grit. Use a damp cloth to clean mushrooms. Mushrooms should never be washed, as they absorb liquid and become saturated.
Before cooking, trim the base of the stems as this area is often chewy in texture.
