Spring Pasta Supper Recipe

Servings 4, Cook+Prep Time: 45 mins

Ingredients: 

  • 1 pound of pappardelle pasta
  • 1/2 pound of bacon, cut into 1/2 inch dice
  • 2 tablespoons of olive oil
  • 2 pints of mushrooms, sliced
  • 2 leeks, large dice
  • 1 pound of asparagus, 2-inch pieces
  • 3 cloves of garlic, minced
  • 1/2 cup of cream
  • sea salt & cracked pepper
  • olive oil
  • parmesan cheese

Tips: Cut down on the olive oil and used a spray version instead to reduce the calories. If you dont have leeks, you could change the recipe, fried some spring onions instead, add some creme freiche and the juice of half a lemon.
