Vegan Baked Apple Cinnamon Oatmeal Recipe

Ingredients: 

  • 2 cups rolled oats
  • 3 tablespoons ground flax seed + ¼ cup filtered water
  • 2 apples, peeled and diced
  • ¼ cup unsweetened apple sauce
  • 1¼ cup vanilla almond milk
  • 3 tablespoons maple syrup
  • 1 tablespoon brown sugar
  • 3 tablespoon vegan margarine, melted (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ⅛ teaspoon nutmeg
  • ½ cup walnuts (optional)

Tips: you could freeze the baked oatmeal after it is cooked. It works well cut it into squares after it is cooled, wrap it in plastic wrap or a freezer bag and freeze. Then you can just take it out and heat it as needed.
